Seedy Cucumber Toasts
This isn't much of a recipe so much as it is a combo-- the super textured seeded spelt bread against the creamy, creamy ricotta topped with crunchy cucumbers and bright green pea shoots.
Ingredients
2-4 cucumbers, sliced into rounds or half moons
4 slices seeded spelt bread
1/2 cup liuzzi ricotta
peashoots
everything spice mixture
Method
- Dress the cucumbers with a big glug of olive oil, pinch of salt, and grind of black pepper and let rest 5 min
- Toast the seeded spelt and allow to cool
- Spread the ricotta all over
- Top with the cucumbers and then the greens and serve with an extra drizzle of olive oil and a sprinkle of everything spice
