Marinated Peppers

These peppers are great to have on hand for snacking or dressing up just about anything from a grilled cheese sandwich to a piece of seared fish.

Ingredients

3 sweet bell peppers, any color
3 cloves garlic, sliced
1 tsp fresh thyme
salt

Method

  1. Heat oven to 425F
  2. Toss peppers in olive oil and salt and roast until they start to soften and skin is charred
  3. Transfer peppers into a container with a lid and steam for 15 minutes. This will help loosen the skins for easier peeling.
  4. Remove skins from peppers with your hands or with the back of a knife
  5. Cut into strips and season with salt
  6. Transfer to the desired container, add sliced garlic and sprigs of thyme
  7. Add enough olive oil to coat
