Green Rice

This rice is fresh and bright and good warm or served room temperature topped with summer vegetables or seared fish.

1 bunch basil
1 bunch parsley
3 garlic cloves
1 C olive oil
2 C rice
1 tsp salt


  1. In a blender blend the garlic, salt and olive oil
  2. Add the herbs and blend to a smooth paste adding more oil if needed
  3. Cook the rice and when just done drain away any extra water
  4. Immediately dress with the herb oil and let cool
  5. Serve room temperature or slightly warm
