Discover the art of pie making in this immersive workshop celebrating the flavors of the season! From mixing pastry with fresh local flours to preparing flavorful fillings and mastering beautiful finishing techniques, you'll learn the foundations of exceptional pies through hands-on instruction and demonstration.

 

Throughout the day, we'll explore a variety of pie styles, discuss the science behind tender, flaky crusts (using whole grains!) and cover essential techniques including mixing, rolling, blind baking, latticing, and troubleshooting common pie challenges. We’ll cover both sweet and savory pie applications, including fruit pie, custard pie, pot pie and more! Students will bring home two ready-to-bake pie shells, fillings, and toppings for your holiday table. 

 

The general itinerary will be (this is subject to adjustment):

12:00 - 12:45 pm: Arrival, Introductions and Farm Lunch

12:30 - 1:00 pm: What is Pie? Key Ingredients to a Great Pie 

1:00 - 2:00 pm: Mixing Pie Dough 

2:30 -  3:00 pm: Break and Farm Tour 

3:00 - 4:00 pm: Fillings Galore 

4:00 - 6:00 pm: Rolling, Latticing, Baking 

6:00 - 7:00 pm: Dinner and Pie!

Sourdough Club: Advanced Sourdough 3-Day Intensive

This class is for seasoned sourdough bakers (professional or home) looking to explore the world of whole-grain and stone-milled flours, wood-fire baking, and more! 
 
Join Granor Head Baker, Jill Morgan, as she guides you through the entire sourdough process from feeding starter, shaping, proofing, scoring, and baking in both a wood and electric oven. In addition to the instruction this package includes all meals including a Welcome Dinner on Thursday night, breakfast and lunch on Friday and Saturday, and tickets to our
Dinner + Drinks: Artisan Grain Collaborative event on Friday night. Throughout the class you'll have full access to the Granor Kitchen and Team to learn all of our tricks and techniques. 
 
Students can expect to work with a diverse array of sourdoughs, ranging from porridge loaves to naturally leavened brioche and many others in between. Students will mix, observe, fold, shape, and bake a variety of breads. This is a very hands-on workshop, you will get your hands in the dough and have the opportunity to investigate whole grain and inclusion influences on sourdough bread making.

 

Students will leave with a sourdough workbook filled with recipes and theory for further reinforcement. Students will also get to bring home a bag of fresh baked bread! Participants in the Advanced 3-Day Intensive also receive a promo code at the time of booking for 10% of the subsequent Sourdough Club tutorials throughout the year.

Dinner + Drinks: Artisan Grain Collaborative

Granor Farm is fortunate to be rooted in a region supported by a variety of organizations devoted to improving the common good. Our September Dinner + Drinks event will be benefiting Artisan Grain Collaborative, a robust network of local farmers, millers, maltsters, distillers, bakers, and chefs. AGC works to create a diverse regional grainshed in the Upper Midwest built upon regenerative agricultural practices that steward the health of communities, local economies, and natural resources.

The evening will kick off with a cocktail and appetizer hour with Artisan Grain Collaborative’s Network Engagement Director, Sarah Elliott, and Granor's Lead Baker, Jill Morgan. This time will provide guests with the opportunity to learn about the organization's essential work directly from Ms. Elliott, as well as connect with other philanthropic-minded community members. We will then move to the Granor Greenhouse for a three-course, family-style meal that showcases the best of Granor's grains and crops, as well as other ingredients from local producers and farms.
