Radish Butter Toasts with Winter Greens

The very classic combination of radishes and butter get a bit of an update when combined to make a delicious topping for toast. It also works well for parties. Simply cut the toast smaller to make bite sized options.

1 bunch radishes, washed
4 tbsp butter, softened
5 sprigs parsley, chopped
1 lemon, zest
4 slices sourdough toast
1 bag winter greens any variety


  1. On the largest tooth of a box grater, grate the radishes
  2. Combine with the soft butter, parsley, lemon zest, and a great big pinch of salt
  3. Spoon over the toast
  4. Dress the winter greens with a glug of olive oil, pinch of salt, and grind of black pepper
  5. Top the toasts with the greens and serve
