Pork Chops with Black Pepper Apples and Arugula

The spicy, sweet, tangy roasted apples go with just about anything but we really like them paired with a nicely cooked pork chop and super fresh arugula salad.

Ingredients

4 tbsp butter
1 tsp cracked black pepper
2 tsp brown sugar
4 apples, peeled and cut into a large dice
1 tbsp apple cider or red wine vinegar
2-4 pork chops, seasoned liberally with salt
1 bag arugula
1/4 cup walnuts, toasted and roughly chopped

Method

  1. In a large frying pan heat the butter until melted and foamy
  2. Combine the black pepper, brown sugar and a big pinch of salt
  3. Add the apples to the butter and allow to roast until golden brown on one side
  4. Flip and sprinkle the black pepper mixture over the apples
  5. Continue cooking and stir occasionally until apples are deeply caramelized and tender then remove from heat and add the vinegar
  6. Sear the pork chops and cook through
  7. Dress the arugula and walnuts with a glug of olive oil and pinch of salt
  8. Serve the pork chops with a spoonful of apples and a big pile of arugula salad
