Pea Shoot Pesto

Pea shoot pesto is perfect for tossing with pasta, spreading on sandwiches, or drizzling over roasted vegetables.

Ingredients

2 cups pea shoots, packed
1/4 cup pistachios, toasted
1/3 cup grated parmesan (or nutritional yeast to keep it vegan)
2 cloves garlic
1/2 cup of olive oil
juice of 1/2 lemon
salt and pepper to taste

Method

  1. In a food processor, combine pea shoots, pistachios, parmesan, garlic, and lemon juice.  Pulse until roughly blended.
  2. With the food processor running, slowly drizzle in olive oil.
  3. Taste and adjust with salt and pepper.
