Panna Cotta with Summer Berries

I like the tang that the buttermilk adds to this panna cotta. If you don't have buttermilk, you can substitute plain yogurt or just use all cream.

Ingredients

1/2 cup sugar
1 cup buttermilk
2 cup cream
1/2 tsp vanilla paste or extract
2 tsp gelatin
1 quart berries of any sort

Method

  1. Sprinkle the gelatin over 1/4 cup cold water to bloom.
  2. In a medium sized sauce pan combine the buttermilk, cream, vanilla, and sugar and bring to just below a simmer and dissolve sugar. 
  3. Add the gelatin and water and allow to dissolve. 
  4. Divide the buttermilk mixture between 6 different cups or jars cover and chill until firm (about 4 hours).
  5. Top with the berries and serve.
