Marinated Asparagus

Not quite a pickle. Not just steamed. Marinated asparagus can be part of a salad or served as a dish in its own right. Plus, it stores in the fridge for up to a week making a very quick dinner indeed.

Ingredients

2 tbsp dijon mustard
1/4 cup white wine vinegar
1/4 cup olive oil
1/2 tsp salt
2 lbs asparagus, any color, ends snapped and thoroughly washed

Method

  1. Whisk everything but the asparagus together
  2. Steam the asparagus until bright green and crisp tender
  3. After cooking, immediately dress the asparagus in the dijon mixture and allow to cool in the dressing
