Glazed Pearl Onions with Thyme & Honey

Sweet pearl onions gently glazed with honey and thyme until tender and glossy, then finished with a splash of cider vinegar for balance. A versatile spring side dish that pairs beautifully with roast chicken, pork tenderloin, grilled sausages, or grain bowls with fresh herbs and greens.

Ingredients

1 lb peal onions
1 tbsp olive oil
1 tbsp unsalted butter
1 tbsp honey
1/2 cup water or chicken stock
1 tsp fresh thyme leaves
1/2 tsp salt
black pepper
1 tsp apple cider vinegar

Method

1. Heat olive oil and butter in a large skillet over medium heat.  Add pearl onions and cook, stirring occasionally, until lightly golden in spots.

2. Add honey, water or stock, thyme, salt and pepper. Stir to combine.

3. Cover and cook until the onions are tender when pierced with a knife and the liquid is mostly reduced.

4. Remove the lid and cook for another few minutes until the onions are glossy and coated in the glaze. Stir in the apple cider vinegar.

5. Transfer to a serving dish and finish with a few extra thyme leaves and black pepper.
