Emergency Pasta Dinner

1 pack Italian sausage, cut into rounds
1 package fresh rigatoni
1 jar Pomodoro Pesto
4 oz ricotta cheese
1/4 cup pangrattato


  1. In a medium frying pan, brown the sausage and cook through
  2. Boil the pasta in heavily salted water until just under al dente, about 3 minutes
  3. Drain the pasta reserving 1/4 cup of the cooking liquid
  4. Toss the pasta with the pomodoro pesto and the cooked sausage
  5. Rinse the jar with the reserved pasta water and then add to the pasta
  6. Divvy across serving dishes and then dot with the ricotta
