You can make a popper out of about any pepper, but we love the ease of this recipe for a party.

Ingredients
3 cloves garlic, minced
1 lemon, zest
1/4 tsp chili flakes (optional)
1/2 cup breadcrumbs
2 pints shishito peppers, tops removed
1 box cheese curds
Method
In a small frying pan heat a hefty glug of olive oil over medium heat
Add the garlic, chili flakes and lemon zest with a big pinch of salt
Fry until fragrant and the garlic is softened, 1-2 minutes, being careful to not burn the garlic
Add the breadcrumbs and toast in the fragrant oil until golden brown
Stuff the shishitos with a cheese curd
Heat a broiler to high
Broil the peppers until they are charred and the cheese starting to melt
Spoon the breadcrumb mixture on a serving platter and top with the shishitos to serve
