Basic Vinaigrette

A good vinaigrette is one of the most versatile recipes to keep in your back pocket. Once you know the basic ratio, you can create endless variations using whatever ingredients you have on hand.

Ingredients

1/4 cup acid (vinegar, lemon juice, pickle brine etc)
3/4 cup fat (olive oil, neutral oil, avocado oil, bacon fat or even mayonaisse for a creamy dressing)
1/2 tsp salt, or to taste

Method

1. Combine the acid and salt in a bowl or a jar with a tight fitting lid.

2. Slowly whisk in the oil until emulsified, or seal the jar and shake vigorously until well combined. 

3. Taste and adjust with additional salt, acid or oil until balanced. 

4. Store in refrigerator.  If using olive oil, allow the dressing to come to room temperature and shake well before serving. 

Pro Tip: Once you've mastered the basic formula, try adding one or more of the following ingrediets: 1-2 tsp dijon or whole grain mustard, 1 tbsp tomato paste, 1-2 tbsp minced shallots, 1-2 tsp olive brine, 1-2 tbsp jam, 1-2 tsp honey or maple syrup for a touch of sweetness.  There are no hard rules - taste as you go and adjust until the dressing suits your palate.
