Sungold Tomato Butter

Compound butter is just butter with stuff in it, but it adds so much more than that to a thick slice of toast!

2 pints sungold tomatoes
1 clove garlic, minced
1/2 lb unsalted butter, softened
1 tsp salt


  1. In a large frying pan heat a big glug of olive oil over medium heat and add the cherry tomatoes with a hefty pinch of salt
  2. Roast until they burst and the liquid reduces into a thick sauce then add the garlic and cook for another minute or two to soften
  3. Transfer the tomatoes and their sauce to a food processor and blitz until very smooth
  4. Add the butter and salt to blend into the tomato mixture
  5. Taste and adjust seasoning as desired
