Spicy Apricot and Black Lentil Salad

This sweet, spicy and earthy salad makes for a good picnic salad or serve as a full meal alongside some grilled fish or ball of burrata cheese.

1 pint apricots, stones removed and cut into quarters
1/4 cup balsamic vinegar
2 tbsp honey
2 tbsp Brewts habanero hot sauce
1/2 cup olive oil
2 cups shredded green or purple cabbage
2 cups cooked black lentils
1 clamshell micro cilantro or basil


  1. Combine everything except the cabbage, lentils, and cilantro and let sit 10 minutes to macerate
  2. Toss everything together with a couple pinches of salt and taste to adjust the seasoning as desired
