Sheet Pan Sausage and Peppers

This sheet tray dinner is deeply satisfying. Feel free to swap mushrooms for the sausage or gnocchi for the potatoes as you like.

Ingredients

4 links Italian sausage, cut into 1/2" thick rounds
2 bullhorn peppers, cut into wide strips
1 onion, cut into wide petals
2 lbs potatoes, cut in half or quarters
2 cloves garlic, minced
1 lemon, cut into thin half moons
1 bunch parsley or dill or a mix, roughly chopped

Method

  1. Heat oven to 400F
  2. In a large bowl toss the sausage, peppers, onions, and potatoes with a hefty glug of olive oil and sprinkle of salt
  3. Transfer to a foil-lined baking sheet and bake 20 minutes
  4. Combine the garlic and lemon with a glug of olive oil and pinch of salt
  5. Spoon the garlic lemon mixture all over, return to the oven and cook until the potatoes are tender and the sausage is cooked through to an internal temperature of 165F, about another 20 minutes
  6. Remove from the oven and transfer to a serving dish finishing with the chopped herbs for garnish
