Skate Wing with Zucchini, Hazelnuts, and Lemon

Skate wing is one of our favorite fish because it cooks quickly and is both flavorful and delicate in texture.

Ingredients

3 medium summer squash, medium dice
6 sprigs parsley, roughly chopped
2 lemons, zest and juice
1 cup hazelnuts, toasted and chopped
1/2 cup olive oil
2 skate wings, rinsed and patted dry
1 cup all purpose or rice flour
1-2 tbsp butter
1 bag greens, arugula or lettuce mix dressed in olive oil

Method

  1. In a large frying pan, heat a big glug of olive oil over high heat until just about smoking
  2. Add the diced summer squash with a big pinch of salt and black pepper and toss to coat then allow to roast undisturbed to allow the sides to caramelize
  3. Once caramelized, stir and cook the other sides of the squash until it is tender but not collapsing, about 4 minutes
  4. After the squash is cooked, remove to a large bowl and combine with the lemon zest, juice, chopped parsley, prepared hazelnuts, and olive oil then set aside
  5. Dredge the fish in the flour and season with salt and pepper
  6. Heat a big glug of olive oil over high heat and then pan-fry on both sides until the fish is cooked through and lightly browned
  7. Add the butter to the pan and then baste the fish with the melted butter
  8. Transfer the fish to serving dishes, top with the zucchini relish and a green salad dressed lightly with olive oil
