3 medium summer squash, medium dice
                                  6 sprigs parsley, roughly chopped
                                  2 lemons, zest and juice
                                  1 cup hazelnuts, toasted and chopped

                                      1-2 tbsp butter
                                      1 bag greens, arugula or lettuce mix dressed in olive oil
