Sheet Tray Salmon with Turmeric Summer Vegetables

One pan dinner alert! This recipe combines all sorts of summer flavors with the smoke of a grill all out of the oven on one pan.

Ingredients

1 bag green beans, cleaned
2 ears corn, kerneled or about 2 cups corn (frozen works too)
2 red bell peppers, cut into strips
2 medium summer squash, diced
3 scallions, sliced thinly
1 tsp ground turmeric
1/2 tsp ground ginger
4 filets salmon, skin on
2 lemons, zest and juice
1/4 cup olive oil
5 sprigs parsley, roughly chopped
5 sprigs dill, roughly chopped (optional)

Method

  1. Toss all of the vegetables together with the turmeric, ginger, and a big glug of olive oil and couple pinches of salt
  2. Lay out on a baking sheet (we line ours with foil for easy clean up)
  3. Season the salmon filets liberally with salt then nestle skin side up onto the sheet tray
  4. Position a rack in the middle of the oven and turn the broiler to high
  5. Place the whole tray in the oven and broil until the skin of the salmon is crisped and the fish cooked through 6-10 minutes depending on thickness
  6. Check the vegetables every two minutes to be sure they are burning and stir if darkening too much
  7. Continue cooking until the salmon is cooked through and the vegetables are slightly charred
  8. Meanwhile combine the lemon zest, juice, olive oil, and herbs with a big pinch of salt
  9. Remove the tray from the oven and spoon the lemon-herb mixture all over before serving
