Scallion Pancakes

Inspired by our upcoming dinner with Kevin Pang, we have all been making scallion pancakes on repeat with the overwintered scallions.

Ingredients

1 1/2 cups all purpose flour
3/4 cup boiling water
7 tbsp vegetable oil
1 tbsp sesame oil
1 tsp salt
4 scallions, sliced thinly

Method

  1. Mix the flour and water together in a bowl until it forms a tacky dough
  2. Knead for 4 minutes
  3. cover loosely with plastic wrap and let rest 30 minutes
  4. Stir together the oils and a tablespoon of flour and set aside
  5. Divide the dough in half and roll one half into a 12 in round
  6. Lightly drizzle with the oil-flour mixture and brush all over
  7. Sprinkle with salt and half the scallions
  8. Roll into a cylinder, coil the cylinder into a spiral and then flatten the spiral with your hand
  9. Repeat with the other half of the dough and remaining ingredients
  10. Roll the first spiral into a 9 inch round with a 1/2 inch slit in the center
  11. Repeat with the second spiral
  12. Heat a large frying pan over low heat for 10 minutes to pre-heat
  13. Add a big glug of vegetable oil and increase heat to medium low
  14. Place one pancake into the frying pan, cover and cook until golden brown (1-1 1/2 minutes)
  15. Drizzle oil over the panckae and brush to spread evenly
  16. Flip the pancake and then cook until the second side is golden brown
  17. Repeat with the second spiral
  18. Cut the pancaks into 8 wedges and serve
