Roasted Carrots with Pickled Squash, Marinated Leeks and Feta

3 lbs carrots, scrubbed and cut in half lengthwise
4 radishes, sliced thinly into rounds
4 oz feta, crumbled
1/2 cup marinated leeks
1/2 cup pickled squash


  1. Heat oven to 400F
  2. Toss the carrots with a big glug of olive oil, salt, and pepper then roast until tender and caramelized, about 35 minutes
  3. Remove from the oven and toss with the marinated leeks, pickled squash, and radishes then transfer to a serving platter
  4. Top with the crumbled feta and serve
