Potato and Caramelized Onion Pizza

This is more of a pissaladière than a pizza, but that's just semantics!

Ingredients

1 ball pizza dough
2 lbs onion, sliced thinly
1 tsp thyme leaves
1 lb potatoes, any variety, cut into 1/4" thick coins
1/2 cup sour cream
1 egg yolk
2 oz blue cheese

Method

  1. Allow the dough to come to room temperature for at least an hour before baking
  2. Heat oven to 400F
  3. In a frying pan, heat a knob of butter over medium heat until melted
  4. Add the onions and thyme leaves with a big pinch of salt and allow the onions to cook until deeply caramelized
  5. Remove from the pan and add 1/2 cup water and the potatoes
  6. Cover the pan and allow the potatoes to steam until just tender (by the time the water is evaporated, they should be ready)
  7. Whisk together the sour cream and egg to make an even sauce
  8. Place a big frying pan or baking sheet into the oven
  9. Stretch the dough to be 1/2 inch thick
  10. Spoon the sour cream mixture all over, top with the caramelized onions, and lay the potatoes all over
  11. Crumble the blue cheese over the top and finish with several grinds of black pepper
  12. Place in the oven and bake until the dough is cooked through, checking and rotating after 7 minutes
  13. Remove and serve with a big green salad
