Onion Jam

This makes a relatively large batch. Feel free to scale up or down depending on how many onions you have.

5 lbs onions
2 cups sugar
1 T salt
1 cups balsamic vinegar


  1. Slice the onions thinly 
  2. Heat a glug of neutral oil in a large shallow pan and add the onions and salt and caramelize to a dark golden brown
  3. Add the sugar and bring to a boil stirring regularly
  4. Add the vinegar and cook until no longer syrupy and then cool
