No Mayo Coleslaw

This coleslaw is light and bright with lots of acidity and a bit of spice from the mustard. The caraway seed is optional, but we really like it.

1/2 tsp caraway seed
1/4 cup olive oil
1/4 cup dijon mustard
2 tbsp apple cider vinegar
10 sprigs parsley, roughly chopped
4 scallions, sliced thinly
1 head napa cabbage, sliced thinly


  1. In a small frying pan toast the caraway seed over medium heat until fragrant, about 30 seconds
  2. Add to the olive oil, mustard, and vinegar and shake or whisk to combine
  3. Combine the cabbage, scallion, and parsley then dress with the mustard dressing and season with a big pinch of salt to taste
