Miso and Sesame Glazed Carrots

This miso butter can be used on any number of things but we love it adding richness to spring carrots.

Ingredients

4 tbsp butter, room temperature
4 tbsp red miso
1 lime, juice and zest
2 tbsp toasted sesame seeds
2 lbs carrots, cleaned and cut into 2 inch pieces
1 bunch scallions, sliced thinly
1 clam micro cilantro

Method

  1. Bring a large pot of salted water to a boil
  2. Combine everything except the carrots, sesame seeds, scallions, and micro cilantro into a soft paste
  3. Simmer the carrots 8 minutes or until beginning to soften
  4. Drain the carrots and discard the water
  5. Return the pot to the stove and heat a glug of olive oil over medium heat
  6. Add the carrots and the miso-butter mixture and a 2 tbsp of water
  7. Cover the carrots and simmer until all the moisture has evaporated, about 5 minutes
  8. Stir to coat then transfer to a serving dish and top with the sliced scallion and micro cilantro
