Midwestern Tabouli

Tabouli is the queen of grain salads. This version features whole oat groats which are healthy, tasty, and grown near by.

Ingredients

1 cup oat groats
1 small cucumber
2 lbs cherry tomatoes
2 medium summer squash
1 shallot or small red onion
10 sprigs parsley
3 sprigs mint
1/2 tsp smoked paprika (optional)
1/4 tsp chili flakes (optional)
1/2 cup olive oil

Method

  1. Bring a medium pot of salted water to a boil
  2. Swirl in the oat groats, return to a boil, reduce to a simmer, and cook until the groats are tender (about 30 minutes)
  3. Halve the cherry tomatoes
  4. Dice the summer squash
  5. Cut the cucumber into half moons
  6. Mince the shallot or onion
  7. Roughly chop the herbs
  8. When the oats are tender, drain and let cool
  9. Combine the vegetables, cooked oats, herbs, oil, and spices if using and toss to make a salad
  10. Taste and adjust seasoning as desired
