Hot Honey Roast Carrots

These carrots benefit from a little extra time in the oven, so don't be afraid of some slightly charred tips.

2 lbs carrots, washed and left whole
1/3 cup honey
2 tbsp water
1/2 tsp chili flakes or one fresh cayenne pepper
1 ball burrata or other creamy cheese
5 sprigs each/or parsley, cilantro, mint, and basil, chopped
1 lemon, zest and juice
1/3 cup olive oil


  1. Heat oven to 400F
  2. Toss the carrots in a glug of olive or neutral oil and a big pinch of salt then roast until fully tender and starting to brown
  3. Meanwhile combine the honey, water, and chili flakes to make a thick syrup
  4. When the carrots are finished cooking brush with the honey syrup and return to the oven to caramelize (another 7-10 minutes)
  5. Transfer the carrots to a serving dish and drizzle with additional hot honey syrup
  6. Dot all over with the creamy cheese
  7. Combine the chopped herbs, lemon zest, juice, and olive oil with a big pinch of salt
  8. Spoon the herb relish all over and serve
