Green Panzanella

This green tahini dressing can be used on any number of things but we love combining it with all green produce for a take on the classic panzanella salad.

1/4 cup tahini
1/2 cup water
1/4 cup red wine vinegar
10 sprigs parsley
5 sprigs dill
1/2 tsp salt
6 slices of bread, ideally sourdough, cut into cubes and toasted
2 cucumbers, cut into a medium dice
2 medium summer squash, sliced thinly
1 red cippolini or shallot, sliced thinly
4 oz goat cheese
1/4 cup pistachios, toasted and roughly chopped


  1. In a blender combine the tahini, water, vinegar, herbs, and salt and blend into a smooth dressing
  2. In a large bowl combine the toasted bread, cucumber, summer squash, and onion then dress liberally with the green tahini dressing
  3. Transfer to a serving platter, dot the goat cheese all over and finish with a scattering of pistachios
