Green Beans with Paprika Lentils

These lentils taste like chorizo but with none of the meat. Cook the lentils in water to keep entirely meat free.

Ingredients

2 quarts green beans
2 cups brown or green lentils
1 onion
2 clove garlic
1 T smoked paprika
1 tsp cumin
2 tsp salt
3 cups water or chicken stock

Method

  1. Clean the green beans removing the stem
  2. Slice the onion and garlic thinly
  3. In a sauce pan heat a glug of neutral oil and add the spices and salt
  4. Toast for 1 minute then add the onion and garlic and reduce the heat
  5. Cook until the onion is soft and then add the lentils and water
  6. Bring to a boil, reduce to a simmer and cook until the lentils are tender (20 minutes)
  7. When lentils are tender, heat a glug of neutral oil in a large frying pan
  8. Pan fry the green beans with a pinch of salt until bright green and tender
  9. Combine the green beans and lentils and serve either warm or room temperature
