Green Beans with Curried Mozzarella

The colors of this dish are all green and yellow. The perfect foil to the bright reds and purples of summer foods.

2 quarts green beans
1 ball fresh mozzarella
1 clam shell basil
1 T curry powder
1/4 cup neutral oil


  1. Clean the green beans removing the stem
  2. Tear the mozzarella into large, irregular chunks
  3. Pick the basil leaves
  4. In a large frying pan heat the neutral oil until shimmering hot
  5. Add the curry powder and remove from the heat and allow to sit 2 minutes
  6. Pour the curry oil over the mozzarella and toss to combine
  7. Wipe the frying pan out and heat another large glug of neutral oil until smoking
  8. Add the green beans and a sprinkle of salt
  9. Roast over high heat until the green beans have blistered skins and are bright green
  10. Transfer to a serving platter and garnish with the mozzarella and basil leaves
