Green Bean and Oat Groat Salad

Boiled oat groats are a nice way to add the chewy pop of whole grains to any salad.

Ingredients

1 cup oat groats
1 lb green beans, trimmed
1/4 cup balsamic vinegar
1/4 cup olive oil
1/4 tsp salt
5 sprigs parsley, roughly chopped
1 lb cherry tomatoes, halved
1 small red onion or shallot, minced (about 2 tablespoons)

Method

  1. Bring a medium pot of salted water to a boil, add the oat groats, return to a boil, reduce to a simmer, and cook until the groats are tender (about 25 mintues)
  2. When the oats are tender, place the cleaned green beans in the bottom of a colander and then drain the oats over the green beans allowing the hot water to gently blanch the green beans
  3. Immediately dress with the balsamic vinegar, olive oil, and additional salt
  4. Just before serving add the cut tomatoes and red onion, taste and adjust seasoning as desired
