1 bunch garlic scapes, sliced thinly
1" ginger, peeled and minced
1 tbsp miso
8 oz mushrooms, any variety, sliced thinly
4 cups broth or water
1 tbsp soy sauce
1 block silken tofu, cut into a medium dice
1 bunch scallions, sliced thinly
1 bunch cilantro, roughly chopped


  1. In a soup pot, heat a glug of neutral oil and sweat the scapes, ginger, and miso and sweat until soft
  2. Add the mushrooms and let cook through
  3. Add the broth, soy, and tofu and bring to a simmer
  4. Taste and adjust seasoning as desired
  5. Top with the scallions and cilantro just before serving
