Crushed Turnips

You could also easily call this dish "Turnip Crush" because it will make you have a crush on turnips from here on out.

Ingredients

6 purple topped turnips or rutabaga
4 tbsp butter
1/2 cup bread crumbs
2 cloves garlic, minced
1 lemon, zest
1/2 cup grated parmesan or cheddar
5 sprigs parsley or dill (optional) chopped

Method

  1. Peel the turnips and boil until tender when pierced with a paring knife, then drain and crush with a potato masher or your hands to make rough pieces
  2. In a large frying pan heat the butter over medium heat until foamy
  3. Add the breadcrumbs and garlic with a pinch of salt and toast until golden brown and fragrant
  4. Remove from heat and combine with the cheese and chopped herbs if using
  5. Wipe out the frying pan and then heat a large glug of olive oil over medium high heat
  6. Pan fry the turnips with a pinch of salt until the edges are golden brown and crispy
  7. At the last minute add the cheesy breadcrumbs and stir to coat
  8. Serve warm or room temperature
