Creamed Kale

This creamy kale can be used to dress pasta or as a side dish as you would creamed spinach.

Ingredients

1 onion, sliced thinly
4 cloves garlic, minced
1 tsp thyme leaves (optional)
1/4 tsp nutmeg
1 cup white wine
2 cups heavy cream
2 bunches kale, any variety

Method

  1. In a large frying pan heat a knob of butter or a glug of olive oil over medium heat
  2. Add the onion, garlic, thyme, and nutmeg with a big pinch of salt and sweat until soft but not browning
  3. Add the white wine and reduce by half
  4. Add the cream, bring to a boil, reduce heat and simmer until reduced by 25% and starting to thicken
  5. Cut the kale into 1/2 in wide ribbons and add to the cream mixture
  6. Cook until the kale is soft and tender
  7. Taste and adjust seasoning
