Cool Cucumber Soup

4 large cucumbers
1 onion
1 head fennel
3 C buttermilk
1 T salt


  1. Thinly slice the cucumbers, onion, and fennel
  2. Toss with the salt and cover with the buttermilk overnight
  3. Blend until chunky and strain
  4. Taste and adjust seasoning and acidity as desired
  5. Serve with a drizzle of olive oil and picked fennel fronds
