Collard Greens with Bacon and Beer

Bacon + beer + brassicas = heaven on earth.

2 bunches collards
4 oz bacon
8 oz amber beer
2 onion
salt and pepper


  1. Thinly slice the onion
  2. Cut the bacon in 1/4" bits
  3. Cut the collards into wide ribbons
  4. In a large frying pan cook the bacon until it is crispy
  5. Add the onions and sweat until tender
  6. Add the collards and the beer and cook until the collards are tender and the beer is reduced by half
  7. Taste and adjust seasoning and serve
