Colcannon

Colcannon is a traditional Irish dish made with potatoes, dairy, and cabbage-- what type of potato, dairy and cabbage is up to you. We like it best with our golden potatoes and Food & Ferments classic sauerkraut.

Ingredients

4 lbs golden or russet potatoes, peeled
8oz sauerkraut, drained
4oz butter
2 scallions, sliced thinly

Method

  1. Cut the potatoes into a large dice and then boil in salted water until tender when pierced with a paring knife
  2. Drain the potatoes and combine with the sauerkraut and butter in a large bowl
  3. Season liberally with black pepper
  4. Mash into rustic chunks
  5. Taste and adjust seasoning as desired
  6. Top with the sliced scallions and a couple additional knobs of butter
