Chard Dolma

Dolma isn't just for grape leaves any more! You can make these with just about any filling, but we like the combo of wild rice and millet.

Ingredients

1/4 cup golden raisins
2 tbsp white wine vinegar
1 tsp honey
1 cup cooked wild rice
1/2 cup cooked millet
1/4 cup tahini
6 large chard leaves, stems removed

Method

  1. Soak the raisins in the vinegar and honey to plump
  2. Combine the wild rice, millet, tahini, and raisins and season to your liking
  3. Bring a medium pot of salted water to a simmer and blanch the chard leaves for 30 seconds to soften
  4. Remove from the water and cool in an ice bath
  5. Drain the leaves
  6. Place 1/4-1/2 cup of the filling in the center of the leaves and fold the leaves around the filling and either serve or chill
  7. To rewarm: place in a steamer basket with the edges of the leaves down and steam until warm throughout, about 5 minutes
