Celery Root and Lentil Salad

To cook the lentils for this salad, follow the instructions on the package or simply boil in plenty of salted water, like pasta, until tender and then drain and use.

2 celery root
2 cups cooked black lentils
1 apple
1/4 cup apple cider vinegar
1/4 cup olive oil
1 bunch parsley


  1. Peel and cut the celery root into match sticks
  2. Slice the apple thinly
  3. Combine all ingredients with a big pinch of salt and pepper
  4. Taste and adjust seasoning as desired
