To cook the lentils for this salad, follow the instructions on the package or simply boil in plenty of salted water, like pasta, until tender and then drain and use.
Ingredients
2 celery root
2 cups cooked black lentils
1 apple
1/4 cup apple cider vinegar
1/4 cup olive oil
1 bunch parsley
Method
Peel and cut the celery root into match sticks
Slice the apple thinly
Combine all ingredients with a big pinch of salt and pepper
