Carta Musica Crackers

We love to start a meal with these crispy, olive oil drizzled, herb strewn crackers. The recipe is adapted from Patrick Mullins, owner of Patellies in Three Oaks, MI.

Ingredients

1 tsp instant yeast
1/4 tsp honey
2 1/4 all purpose flour
3 3/4 all purpose flour
2/3 cup olive oil
2 tsp salt
2 tbsp cup chopped herbs, rosemary, parsley, thyme etc

Method

  1. In a large bowl dissolve the yeast, sugar, and 2 1/4 cups warm water
  2. Add the 2 1/4 cups flour and mix to combine then allow to proof in a warm place for 1 hour
  3. Then add the rest of the flour, olive oil, and salt
  4. Mix until it makes a smooth dough and then cover and allow to proof until double in size, about 1 hour
  5. Heat the oven to 375F
  6. Flip the dough onto a floured surface and divide into two pieces
  7. Roll each piece of dough until thin and then sprinkle with half of the herbs and drizzle liberally with olive oil and top with salt and black pepper
  8. Bake until golden brown and then remove from the oven and sprinkle with the remaining herbs and top with some more olive oil just before serving
