Carrot Rye Muffins

These muffins are sweet and spiced and full of grated carrot to make your day super sunny.

Ingredients

1 cup rye flour
1 cup all purpose flour
1 cup sugar
2 tsp baking soda
2 tsp five spice
1/2 tsp ground ginger
1/2 tsp salt
1/4 cup maple syrup
2 cups shredded carrot
1 cup shredded apple
1/2 cup raisins
1/2 cup chopped pecans
3 eggs
1 cup vegetable oil

Method

  1. Heat oven to 350 F
  2. Combine the flour, sugar, baking soda, spices, and salt
  3. Add the maple syrup, carrot, apple, raisins, and pecans and toss to coat
  4. In a separate bowl combine the eggs and oil and whisk together until smooth
  5. Add the egg mixture to the carrot flour mixture
  6. Spoon batter into lined muffin tins
  7. Bake until a cake tester comes out clean, about 20 minutes, rotating half way through
