Carrot Rye Muffins
These muffins are sweet and spiced and full of grated carrot to make your day super sunny.
Ingredients
1 cup rye flour
1 cup all purpose flour
1 cup sugar
2 tsp baking soda
2 tsp five spice
1/2 tsp ground ginger
1/2 tsp salt
1/4 cup maple syrup
2 cups shredded carrot
1 cup shredded apple
1/2 cup raisins
1/2 cup chopped pecans
3 eggs
1 cup vegetable oil
Method
Heat oven to 350 F
Combine the flour, sugar, baking soda, spices, and salt
Add the maple syrup, carrot, apple, raisins, and pecans and toss to coat
In a separate bowl combine the eggs and oil and whisk together until smooth
Add the egg mixture to the carrot flour mixture
Spoon batter into lined muffin tins
Bake until a cake tester comes out clean, about 20 minutes, rotating half way through
