Carrot and Quinoa Salad

This hearty salad is perfect for a dinner party or layered in a jar for a work lunch.

3-4 carrots
2-4 radishes
1 cup cooked quinoa
1 bag arugula
2 tbsp vinegar, any variety except distilled white
2 tbsp dijon mustard
1 tsp honey
1/4 cup olive oil


  1. Using a vegetable peeler, make wide ribbons with the carrots
  2. Shave the radishes into thin slices
  3. In a jar shake together the mustard, vinegar, honey, and olive oil with a pinch of salt
  4. Toss the carrots, radish, quinoa, and arugula with half of the dressing
  5. Taste and add more dressing as desired
