Blistered Cucumber and Kohlrabi Salad

This salad is both hot and cold and filling and refreshing.

2 cucumbers
2 bunch kohlrabi
1 cup plain yogurt
1 lemon, zest and juice
1/2 cup chopped herbs-- dill, parsley, cilantro, basil
2 cups chickpeas


  1. Cut the cucumbers into chunks
  2. Trim and peel the kohlrabi then cut into matchsticks
  3. Combine the yogurt, lemon juice, zest, and herbs with a big pinch of salt
  4. Get a frying pan smoking hot
  5. Toss the cut cucumber with a glug of olive oil and pinch of salt
  6. Roast the cucumbers in the hot pan until browned on one side
  7. Flip the cucumbers and add the chickpeas to warm
  8. Remove from the heat and combine with the kohlrabi and yogurt dressing to serve
