Asparagus with Green Garlic Aioli

This is one of our favorite spring dishes. The green garlic is the tender stalk of the garlic plant. If you don't have green garlic, use garlic cloves or scapes. And if you don't want to make the aioli, just add some minced garlic and lemon to store bought mayo.

Ingredients

2 bunches asparagus, any color
2 stalks of green garlic, sliced thinly, or 2 cloves regular garlic, minced
1 egg
8 oz neutral oil
4 oz olive oil
1 lemon, zest and juice
1/2 tsp salt
1/4 cup bread crumbs

Method

  1. Heat oven to 400F
  2. Clean and dry the asparagus
  3. Toss with a little olive oil, salt and pepper and roast until tender and lightly charred
  4. Meanwhile, in a food processor blend the garlic, egg, lemon zest, juice, and salt
  5. Then slowly drizzle in the oils to make a thick mayo
  6. Lay the asparagus on a serving platter, top with some aioli, and finish with a scattering of breadcrumbs over the top
