Winter Margherita Pizza
You can make pizza anytime of year and winter pizza is best with preserved tomatoes!

Ingredients
1 ball pizza dough
1 pint roasted cherry tomatoes (usually in the freezer section)
2 tbsp olive oil
2 balls fresh mozzarella, diced into cubes
2 oz dry salami (optional)
1 clam shell basil micro greens
Method
Allow the pizza dough to come to room temperature at least an hour before baking
Heat oven to 400F with a baking sheet or large frying pan in the oven to pre-warm
Take 1/2 cup of the roasted cherry tomatoes and add 3/4 cup boiling water, and the olive oil then blend in a blender to make a chunky sauce
Stretch the pizza dough to 1/2 inch thick
Spoon the tomato sauce all over
Scatter the mozzarella, additional roasted cherry tomatoes, slices of the salami all over
Bake until the pizza is cooked through and melty, checking after 7 minutes
Remove from the oven and top with the microbasil just before serving
