Watermelon Salad

This is our go-to watermelon recipe for those hot August days.

1/2 watermelon
1 bag arugula
4 oz feta
2 T honey
2 T apple cider vinegar
1/4 C olive oil
10 sprigs mint


  1. Cut the melon into bite sized pieces
  2. Whisk together the honey, vinegar, olive oil, and a big pinch of salt
  3. Toss the melon in the dressing and then combine with the arugula
  4. Crumble the feta on top and season with a several grinds of black pepper
