Tomato Plate with Roasted Squash

This recipe makes a bit more coffee rub than you might use to roast the squash. Save it and use it on roast chicken, carrots, pork, swordfish, and/or beets.

2 T ground coffee
1/2 tsp Chinese 5 spice
1/4 tsp ginger
1/4 tsp cayenne
1/4 tsp salt
1/4 tsp brown sugar
3 large tomatoes
1 delicata squash
olive oil
fresh goat cheese
pepitas, toasted


  1. Combine the coffee, spices, salt, and sugar. 
  2. Heat oven to 400F
  3. Cut the squash into half moons (scooping the seeds out before cutting)
  4. Toss with a glug of oil and the coffee rub and roast until tender
  5. Slice the tomatoes and lay on serving platter
  6. Top with the roasted squash
  7. Drizzle with olive oil
  8. Dot goat cheese over the top
  9. Sprinkle with pepitas and torn basil
