Tomato Jam

Tomato jam is a great way to extend the tomato season. We use it to top burrata or something like roasted squash or sweet potatoes

1 lb tomatoes, any variety, roughly chopped
1/2 cup sugar
1/2 tsp chili flakes
red wine vinegar as needed


  1. In a saucepan, combine the tomatoes, sugar, and chili flakes and turn onto low heat
  2. Cook the tomato down until is saucy and thick
  3. Remove from the pan and in a food processor or blender, whiz to blend the skins and seeds until smooth
  4. Taste and cook down until the perfect balance of sweet, spicy, and tangy adding a splash of vinegar as needed
